Ingredients

  • For the Chicken:
  • 2 large chicken breasts, sliced in half lengthwise (or 4 boneless thighs)

  • 1 teaspoon smoked paprika

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • 2 tablespoons olive oil

  • For the Sauce:
  • 1 tablespoon butter

  • ½ small onion, finely chopped

  • 3 cloves garlic, minced

  • ½ teaspoon red pepper flakes (adjust to taste)

  • 1 cup fresh cherry tomatoes, halved (or 1 large Roma tomato, diced)

  • 1 teaspoon balsamic vinegar (for extra depth)

  • 1 cup chicken broth (or bone broth for added nutrients)

  • ¾ cup heavy cream (or coconut cream for a dairy-free option)

  • ½ cup parmesan cheese, grated

  • 1 teaspoon Italian seasoning

  • 1 tablespoon fresh basil, chopped

Directions

  • Prepare the Chicken – Pat the chicken dry and season with smoked paprika, salt, and black pepper.
  • Sear the Chicken – Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 4-5 minutes per side until golden brown. Remove and set aside.
  • Sauté Onion & Garlic – Reduce heat to medium. Melt butter in the skillet, then add chopped onion. Sauté for 2-3 minutes until softened. Add minced garlic and red pepper flakes, cooking for 1 minute until fragrant.
  • Roast the Tomatoes – Stir in the cherry tomatoes and balsamic vinegar. Sauté for 3-4 minutes until the tomatoes soften and release their juices.
  • Deglaze – Pour in the chicken broth and scrape up any browned bits from the pan. Let it simmer for 2 minutes.
  • Add the Cream & Cheese – Lower heat and stir in heavy cream, parmesan, and Italian seasoning. Let the sauce thicken for 3-4 minutes.
  • Combine – Return the chicken to the skillet, spoon the sauce over it, and let it simmer for 5 minutes until cooked through.
  • Finish & Serve – Stir in fresh basil before serving.

  • I personally use Coconut Milk to make a more healthy alternative.

Notes:

🍚 With Rice – Pair with jasmine rice or garlic butter rice.
