I recently wrote my Marry Me Chicken Recipe and since it became so popular, I thought I’d recreate this as a soup!

Ingredients

  • 2 tablespoons olive oil

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • 1 teaspoon Italian seasoning

  • ½ teaspoon red pepper flakes (adjust to taste)

  • ½ teaspoon salt (or to taste)

  • ½ teaspoon black pepper

  • 4 cups chicken broth

  • 1 ½ cups heavy cream

  • 2 cups cooked, shredded chicken (rotisserie works great!)

  • 1 cup small pasta shells (or any pasta of your choice)

  • ½ cup sun-dried tomatoes, chopped

  • 3 cups fresh spinach, chopped

  • ½ cup grated Parmesan cheese (plus more for garnish)

  • 1 tablespoon tomato paste

  • 1 teaspoon paprika (optional, for color & depth)

  • 1 tablespoon lemon juice (for a bright finish)

Directions

  • In a large pot or Dutch oven, heat the olive oil over medium heat. Add the onion and sauté for about 3-4 minutes until softened. Stir in the garlic, Italian seasoning, red pepper flakes, salt, and black pepper. Let it cook for another minute until fragrant.
  • Stir in the sun-dried tomatoes and tomato paste, allowing them to cook for about a minute to deepen the flavor.
  • Pour in the chicken broth and bring to a gentle simmer. Add the pasta shells and cook for 8-10 minutes, or until al dente. Stir occasionally to prevent sticking.
  • Lower the heat and stir in the heavy cream and paprika (if using). Let the flavors meld for a couple of minutes.
  • Stir in the shredded chicken and let it heat through. Then, toss in the chopped spinach, allowing it to wilt into the soup.
  • Add the Parmesan cheese, stirring until melted and combined. Finish with a squeeze of lemon juice for a bright, balanced flavor.
  • Ladle into bowls, garnish with extra Parmesan cheese and serve with warm, crusty bread. Enjoy this heartwarming, proposal-worthy soup!

  • I personally use Coconut Milk to make a more healthy alternative.
