I’ve already covered blueberry pancakes here and I thought these would be a great variation! These fluffy banana pancakes are the perfect way to start your morning!

They’re light, airy, and packed with real banana flavor, making them naturally sweet with a hint of warm cinnamon.

Now unlike regular pancakes, these are made with mashed ripe bananas, giving them a moist and tender texture while also being a great way to use up overripe bananas.

My Pro Tips for the Best Banana Pancakes

Add Chocolate Chips or Nuts – Mix in some chocolate chips, walnuts, or pecans for extra flavor and texture!

Use Very Ripe Bananas – The riper the banana, the sweeter and more flavorful your pancakes will be! Look for bananas with brown spots. (I love using this banana masher )

Don’t Overmix the Batter – Stir until just combined; lumps are okay! Overmixing creates very tough pancakes.

Use Buttermilk for Extra Fluffiness – Buttermilk adds a subtle tang and makes the pancakes extra fluffy. If you don’t have buttermilk, you can make your own by adding 1 tbsp of vinegar or lemon juice to 1 cup of milk.

Let the Batter Rest for 5 Minutes – This allows the baking powder to activate, resulting in fluffier pancakes.

Cook on Medium-Low Heat – Cooking on low ensures the inside is fully cooked while the outside gets a beautiful golden-brown crust. (This non-stick pan is perfect for pancakes! )

Ingredients

  • 2 ripe bananas, mashed

  • 1 ¼ cups all-purpose flour

  • 1 tablespoon baking powder

  • ½ teaspoon baking soda

  • ¼ teaspoon salt

  • ½ teaspoon cinnamon

  • 1 cup buttermilk

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 2 tablespoons melted butter (or vegetable oil)

  • 1 tablespoon honey or maple syrup (optional, for extra sweetness)

  • ½ cup chocolate chips or chopped nuts (optional)

  • Butter or oil for cooking

  • For Serving:
  • Maple syrup

  • Sliced bananas

  • Whipped cream

  • Chopped nuts

Directions

  • Mash the Bananas. In a large bowl, mash two ripe bananas until smooth using a fork or potato masher. If you like a little texture, leave a few small banana chunks.
  • Mix the Dry Ingredients. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. This helps distribute the leavening agents evenly for perfectly fluffy pancakes.
  • Combine the Wet Ingredients. To the mashed bananas, add buttermilk, egg, vanilla extract, melted butter, and honey. Stir well to combine. Slowly fold in the dry ingredients, mixing just until incorporated. If using, gently fold in chocolate chips or nuts. Avoid overmixing, as this can make the pancakes dense.
  • Let the Batter Rest. Let the batter sit for 5 minutes. This gives the baking powder time to activate, creating extra fluffy pancakes!
  • Cook the Pancakes. Heat a non-stick skillet or griddle (I use this non-stick griddle 🔗) over medium-low heat. Lightly grease with butter or oil. Flip and cook for another 1-2 minutes, until golden brown and cooked through.
