Back in UAE, coleslaw isn’t very popular. I would see it in Hollywood movies and wonder what it tasted like. When I was 5, I got a small container of coleslaw with our bucket of KFC. And the first time I tried it, I was in awe. It was so tasty and crunchy.

So this recipe is a tribute to those good memories. It’s a no-fuss, fail proof version of a classic coleslaw. It’s fresh, crunch and creamy.

It comes together in 10 minutes so it can be the accompaniment to any good meal!

Ingredients

  • 4 cups shredded green cabbage

  • 1 cup shredded purple cabbage (optional but adds color)

  • 1 cup shredded carrots

  • ½ cup mayonnaise

  • 1 tablespoon apple cider vinegar

  • 1 tablespoon honey or sugar

  • 1 teaspoon Dijon mustard

  • Salt and pepper to taste

Directions

  • In a large bowl, combine the green cabbage, purple cabbage, and carrots.
  • In a smaller bowl, whisk together the mayonnaise, apple cider vinegar, honey, Dijon mustard, salt, and pepper until smooth.
  • Pour the dressing over the cabbage mixture and toss everything together until well coated.
  • Let it sit in the fridge for at least 10 minutes before serving—this helps the flavors meld and gives it that classic creamy texture.
  • Taste and adjust seasoning if needed. That’s it. You just made coleslaw.
