The Lazy Girl’s Burrito Bowl is what I throw together when I want something comforting.

It’s fast, filling, and you can eat this while watching a movie.

You don’t need a bunch of fancy ingredients or time—just a microwave, a few pantry staples, and a big bowl to curl up with.

  • 1 ripe avocado, chopped

  • A handful of tortilla chips, crushed

  • Optional: sour cream, jalapeños, cilantro, lime wedges, hot sauce

Directions

  • Start by grabbing a large microwave-safe bowl.
  • Add your rice (freshly cooked or microwaved—no judgment), black beans, and frozen corn.
  • Mix it all up, then microwave the bowl for 2–3 minutes until everything is hot. Once it’s steamy, stir in the salsa and cheese.
