I felt I’d make another version for chicken lovers too.
My partner and I do buy rotisserie chicken often, so I genuinely love this recipe. This has got everything I love about a burrito – tender chicken, warm rice, melty cheese and lots of toppings but without the folding mess.
I also love rice since I’m asian. =)
It’s fast, filling, and you can eat this while watching a movie.
I believe in taking shortcuts to make cooking easier.
I will be adding some variations and substitutions in case you don’t have some ingredients.

Tips for Extra Flavor

1 cup cooked rice (microwave rice pouches work great)
1 cup cooked shredded or diced chicken (rotisserie is perfect!)
1/2 cup frozen corn
1/2 cup canned black beans, drained and rinsed
1/2 cup salsa (any kind you love)
1/2 cup shredded cheese (cheddar, Monterey Jack, or anything that melts)
1 avocado, diced
Crushed tortilla chips for topping
Optional: sour cream, hot sauce, jalapeños, cilantro, lime wedges
Directions
- If your chicken is cold, warm it up in the microwave or a skillet with a splash of water and a pinch of taco seasoning or cumin.
- In a microwave-safe bowl, combine your rice, corn, beans, and chicken. Microwave for 2–3 minutes until everything is hot.
- Stir in your salsa and cheese so it melts and gets all gooey and delicious.
- Top with diced avocado, crushed tortilla chips, and anything else your heart desires.
- That’s it. The whole thing comes together in one bowl and under 10 minutes—faster than scrolling through takeout apps.
- This is the perfect meal if you’re college student or just want to hit all your nutrition goals but don’t have too much time.
Variations & Substitutions
No black beans? Use pinto beans or even canned chili beans.
No avocado? A dollop of guacamole or some pickled jalapeños will do the trick.
Want to skip the cheese? Try a dairy-free alternative or just top with extra salsa.
You can also swap rice for quinoa, cauliflower rice, or even leftover noodles (yes, that works). And if you’re out of cooked chicken, frozen grilled chicken strips or leftover baked chicken make perfect substitutes.
