I love soy sauce. And I regularly try to incorporate it into all my meals. Maybe I have a soft spot for it because I’m Asian.

This recipe is what I make when I’m tired, and I don’t want a sandwich or something bland.

These egg noodles come together in 10 minutes but look and taste like they took way more effort.

They’re coated in a nice soy-based sauce, tossed with pan-seared scallions, and finished with fresh red chili slices and sesame seeds.

It’s fiery, comforting, and totally addictive — the kind of meal you eat straight from the pan.

Just something bold, spicy, and comforting.

Ingredients

  • 2 blocks (or about 150g) dried egg noodles

  • 1 tablespoon sesame oil or any neutral oil

  • 4 scallions, cut into 2-inch chunks

  • 2 garlic cloves, minced

  • 1 fresh red chili (like Thai or Fresno), sliced thin

  • 1 tablespoon soy sauce

  • 1 tablespoon dark soy sauce (adds deeper flavor and color)

  • 1 teaspoon rice vinegar or lime juice

  • 1 teaspoon sugar or maple syrup

  • Optional: sesame seeds, chili oil, crushed peanuts

Directions

  • Boil the egg noodles according to package instructions until just tender. Drain and rinse briefly under cool water to stop the cooking.
  • In a skillet or wok, heat the sesame oil on medium-high. Add scallions and let them sear until they begin to brown and blister at the edges.
  • Toss in the garlic and chili slices, stirring just until fragrant.
  • Add in the noodles, soy sauces, vinegar, and sugar. Stir everything together vigorously until the noodles are glossy and evenly coated in the sauce.
  • Sprinkle sesame seeds and an extra hit of chili if you want more heat.

  • You can pair this with a nice fried egg as well!

Variations & Substitutions

Swap egg noodles with ramen, rice noodles, or even spaghetti if that’s what you have.

You can add veggies like bell peppers, mushrooms, or shredded carrots.

For protein, stir in scrambled eggs, shredded chicken, or crispy tofu. Don’t eat spicy? Skip the fresh chili and finish with a touch of honey and sesame oil for a mellow version.
