Cheesy Air Fryer Egg Bites

A month ago, I covered 2 popular airfryer recipes – one standard chicken thigh air-fryer recipe and another with an Asian twist because I love all things soy.

Because it did so well, I covered another egg toast recipe (inspired by one of my favorite Ghibli movies) and I thought, why not do another egg recipe!

I’ve covered a few of my favorite Studio Ghibli recipes here.

These protein-packed egg bites are so easy to make and are really, really tasty.

Made right in the air fryer with no fuss, they’re portable, reheat very easily, and the flavor options are endless.

These little bites saved my mornings, and honestly, they might just save yours too.

At the end of the recipe, I’ve included Variations and Substitutes.

Tips Make It Even Better:

  • For extra flavor, sprinkle in a pinch of garlic powder or smoked paprika.
  • Use this silicone muffin mold for the perfect air fryer fit.
  • If you’re not a fan of onions or bell peppers, try mushrooms or sun-dried tomatoes for a rich umami hit.
  • Add a little crumbled feta or goat cheese if you’re feeling fancy.
  • Meal-prepping? Store these in the fridge for 3–4 days or freeze and reheat for 30 seconds in the microwave.

Cheesy Air Fryer Egg Bites

Ingredients

  • 4 large eggs

  • ¼ cup milk or dairy-free alternative

  • ¼ cup finely chopped onion

  • ¼ cup chopped spinach

  • ¼ cup diced bell pepper

  • ¼ cup shredded cheddar or mozzarella

  • Salt and pepper, to taste

  • Optional: cooked bacon bits or chopped ham

Directions

  • In a bowl, crack the eggs and whisk them with the milk until smooth and slightly frothy. Add your chopped veggies, cheese, salt, pepper, and optional bacon or ham.
  • Stir everything together until nicely combined.
  • Spray a silicone muffin mold or silicone cupcake liners with a bit of oil and pour the mixture evenly into the cups, filling them only about ¾ full so they can puff up without overflowing.
  • Place the mold into your air fryer basket. Air fry at 300°F (150°C) for 10 minutes, or until the centers are fully cooked and slightly puffed.
  • Remove from the air fryer and let them cool for a minute or two before popping them out.

  • You can make these everyday because they’re super healthy and easy to make!

Variations & Substitutions

No spinach? Kale or finely chopped broccoli works.

Dairy-free? Use plant-based milk and vegan cheese like this one.

Want it spicier? Add jalapeños or a dash of chili flakes.

More protein? Toss in chopped turkey sausage or tofu cubes.
