Air Fryer Egg Toast (15 Min)

Last week I covered 2 airfryer recipes – one standard chicken thigh air-fryer recipe and another with an Asian twist because I love all things soy.

And because my partner has his protein requirements (he’s an athlete), I try to incorporate eggs in everything!

This is such a quick and lovely egg toast recipe, which I discovered from one of my favorite Studio Ghibli movies.

I’ve covered a few of my favorite Studio Ghibli recipes here.

And when I realized I could make it in the air fryer, with zero fuss and no skillet to clean, I honestly loved it.

It’s simple, yes, but there’s something really comforting about biting into crispy, golden toast with a soft or jammy egg in the center.

This air fryer egg toast is fast for weekdays!

You can also add cheese, bacon bits, herbs, or even avocado slices—or keep it minimal with just salt and pepper.

The air fryer makes the bread perfectly crisp and the egg just right, every time. It’s a little crispy, a little gooey, and entirely delicious.

Let’s dive in!

Tips to make it even better!

  • Use thicker bread like Texas toast or brioche for a sturdier base—this brand is great: Brioche Sliced Loaf.
  • If you like cheese like me, sprinkle shredded mozzarella or cheddar around the egg before cooking—try this one: Shredded Cheddar Blend.
  • Don’t overload with toppings before air frying—add extras like avocado or microgreens after for the best texture.
  • Want that extra golden finish? Brush the crust with olive oil or melted butter before cooking.

Ingredients

  • 1–2 slices of bread (sourdough, brioche, or sandwich bread)

  • 1–2 eggs

  • 1 teaspoon butter or mayo (optional, for spreading)

  • Salt and pepper, to taste

  • Optional: shredded cheese, chopped herbs, hot sauce, or avocado

Directions

  • Preheat your air fryer to 350°F (175°C) for a couple of minutes while you prep. Take a slice of bread and use the back of a spoon or your fingers to gently press down the center, creating a well—but leave a border around the edge. Spread butter or mayo on the edges if you want that extra crisp. Crack an egg into the well (tip: crack it into a small bowl first to make pouring easier). Sprinkle with salt, pepper, and any toppings you like.
  • Carefully place the toast in the air fryer basket and cook for 6 to 8 minutes, depending on how runny you want your yolk. Check at 6 minutes if you like a softer yolk; add a minute or two for a more set center. Remove with tongs, top with fresh herbs or hot sauce, and serve immediately. It’s amazing as-is or paired with a side of fruit or greens.

  • You can make these everyday because they’re super healthy and easy to make!

Variations & Substitutions

Add a slice of cooked bacon or turkey before cracking the egg for a heartier version.

Make it spicy with chili flakes, jalapeños, or a drizzle of sriracha.

Try it with dairy-free cheese and gluten-free bread for dietary needs.

Use mashed avocado instead of butter around the edge for a healthy fat boost.
