Golden Apple Yogurt Pancakes

I know I’ve published a lot of pancake recipes. But I can’t help it, I have a sweet tooth.

You can check out my blueberry pancakes here and Banana Pancakes here. I also love these really healthy carrot pancakes. So, I thought these would be a great variation!

Since I’m trying to make my breakfasts more healthy, I thought this would be a great idea.

I wanted pancakes, but not the kind that sit heavy or feel like cake.

I needed something light, so this recipe was born!

They’re soft and fluffy thanks to the yogurt, and you can taste the apple in the pancake.

These are not overly sweet, and just spiced enough to make you feel cozy!

Tips for Extra Delicious Pancakes

Use full-fat Greek yogurt for the fluffiest texture and best flavor. I love this one: Thick & Creamy Greek Yogurt – Amazon

Grate the apple on the small holes of a box grater so it melts right into the batter.

For extra flavor, add a dash of nutmeg or ginger to the batter.

Keep pancakes warm in a 200°F oven while you cook the rest for serving all at once.

Ingredients

  • ¾ cup plain yogurt (Greek or regular)

  • 1 egg

  • 1 tablespoon maple syrup or honey

  • 1 teaspoon vanilla extract

  • ¾ cup all-purpose flour

  • 1 teaspoon baking powder

  • ¼ teaspoon baking soda

  • ½ teaspoon cinnamon

  • Pinch of salt

  • 1 small apple, peeled and grated (about ½ cup)

  • Butter or oil for the pan

Directions

  • In a medium bowl, whisk together the yogurt, egg, maple syrup, and vanilla until smooth. In another bowl, mix the flour, baking powder, baking soda, cinnamon, and salt. Add the dry ingredients to the wet and stir until just combined—don’t overmix.
  • Gently fold in the grated apple. The batter will be thick, but that’s what makes the pancakes extra fluffy.
  • Heat a nonstick skillet or griddle over medium heat and add a bit of butter or oil.
  • Drop the batter by heaping tablespoons and use the back of the spoon to spread into circles.
  • Cook for 2–3 minutes, or until bubbles form and the edges look set, then flip and cook for another 1–2 minutes. Serve warm with your favorite toppings.

Substitutions and Add-Ins:

Swap the apple for grated pear or mashed banana for a different twist.
Use whole wheat flour or oat flour instead of all-purpose for extra fiber.
Add chopped walnuts, raisins, or mini chocolate chips for extra texture.
Make it dairy-free with coconut yogurt and almond milk instead of regular yogurt.
For added protein, stir in 1 tablespoon of almond butter or a scoop of vanilla protein powder.
