It’s the perfect dish for a cozy meal, full of deep, comforting flavors! I made this for my partner and he loved it!

- For the Chicken:
2 large chicken breasts, sliced in half lengthwise (or 4 boneless thighs)
1 teaspoon smoked paprika
½ teaspoon salt
½ teaspoon black pepper
2 tablespoons olive oil
- For the Sauce:
1 tablespoon butter
½ small onion, finely chopped
3 cloves garlic, minced
½ teaspoon red pepper flakes (adjust to taste)
1 cup fresh cherry tomatoes, halved (or 1 large Roma tomato, diced)
1 teaspoon balsamic vinegar (for extra depth)
1 cup chicken broth (or bone broth for added nutrients)
¾ cup heavy cream (or coconut cream for a dairy-free option)
½ cup parmesan cheese, grated
1 teaspoon Italian seasoning
1 tablespoon fresh basil, chopped
Directions
- Prepare the Chicken – Pat the chicken dry and season with smoked paprika, salt, and black pepper.
- Sear the Chicken – Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 4-5 minutes per side until golden brown. Remove and set aside.
- Sauté Onion & Garlic – Reduce heat to medium. Melt butter in the skillet, then add chopped onion. Sauté for 2-3 minutes until softened. Add minced garlic and red pepper flakes, cooking for 1 minute until fragrant.
- Roast the Tomatoes – Stir in the cherry tomatoes and balsamic vinegar. Sauté for 3-4 minutes until the tomatoes soften and release their juices.
- Deglaze – Pour in the chicken broth and scrape up any browned bits from the pan. Let it simmer for 2 minutes.
- Add the Cream & Cheese – Lower heat and stir in heavy cream, parmesan, and Italian seasoning. Let the sauce thicken for 3-4 minutes.
- Combine – Return the chicken to the skillet, spoon the sauce over it, and let it simmer for 5 minutes until cooked through.
- Finish & Serve – Stir in fresh basil before serving.
- I personally use Coconut Milk to make a more healthy alternative.
